  • 2 Eggs
  • Cottage Cheese
  • Shredded Mozzarella Cheese
  • Spinach, peppers, or other veggies of choice
  • Pepper or other favorite seasonings

Instructions

  • Preheat oven to 350 degrees.
  • Spray oven-safe bowl with olive oil spray and place the tortilla in the bowl.
  • Add two eggs and mix well.
  • Add cottage cheese to the eggs and mix.
  • Top with shredded cheese, veggies, and seasonings of choice.
  • Bake for 20-25 minutes or until the egg is no longer runny.

  • 1 Low carb tortilla I used the Flat Out Light Original
  • 2 Eggs
  • 2 tbsp Low Fat Cottage cheese
  • 1.5 tbsp Shredded mozzarella cheese
  • 1 handful Raw spinach
  • 1/4 Red bell pepper
  • Sprinkle with black pepper or other favorite seasonings

  • Spray oven-safe bowl with olive oil spray and place the tortilla in the bowl. The bowl should be slightly smaller than the size of the tortilla (you want the sides of the tortilla to come up the sides of the bowl slightly to form a bowl shape for the egg to sit in).
